燻製の3種類

冷燻法 15℃~30℃ 1週間~数週間
温燻法 50℃~80℃ 1時間~6時間以上
熱燻法 90℃~140℃ 30分~3,4時間


冷燻法…保存性が高く、香りが良い。長時間の塩漬けと風乾による熟成が必要。外気温15℃以下の気象条件が必要。
温燻法…ソーセージ、ハム、魚介類、卵に適している。
熱燻法…スペアリブ、チキン、肉類、魚類に適している。
